Whitesell Farms Wagyu

Steer 7B was born at Whitesell Farms Wagyu on 26-Feb-14 in our fourth year of producing Wagyu influenced beef at our farm on the top of Battleground Mountain in the northwest corner of Cullman County, Alabama. He represents second generation genetics as an F2 (75%) Wagyu cross. In this generation, we cross lager framed Wagyu genetics into our first generation program of maximizing marbling to gain size while maintaining marbling.

The sire of 7B is a bull we selected specifically for breeding to our first generation F1 Wagyu heifers, BR Michifuku 1604. His selection was based on excellent performance in the 2012 National Wagyu Sire Summary where he was the Number 1 ranked bull for ribeye size while being in the Top 20% for marbling and backfat. We just are now getting to distriubte beef from this bull and it is getting great reviews. The dam of 7B is one of our best performing first generation F1 Wagyu heifers, WF Ms Merida 8Z. Her sire is Bar R Sanjirou 4P, our mainstain bull for use on our commercial herd that we have used for many years with great results. This bull has great carcass data trials, placing as the Number 3 marbling bull in 2009. His genetic tests are also excellent with a tenderness score of 7 and the preferred fat profile, SCD: AA. 7B spent his first 205 days in a pasture on our farm with his mother as his main source of sustenance. At weaning on day 205, he weighed 315 lbs, which is pretty small, but not surprising since he was the first calf produced by this cow. We expect these first calf steers to be 60lbs behind the same calf from a mature cow. At weaning, he transitioned to our "Grower Pasture" where he spent the next year on good grass, with access to high quality hay and minerals, and a daily supplemental ration of between 5 and 8 lbs of 13% protein cattle feed. His yearling weight was 495 lbs, still small, but gaining some ground.

At 20 months of age, 7B transitioned to our "Finishing Pasture" at a weight of 705lbs. For five months over the winter of 2015/2016, he grazed winter rye grass, had high-quality hay, and free choice access to a special formulation of all-natural finishing feed prepared for us by our friends at Hillsboro Feeds, west of Decatur, AL. During this period, he did a great amount of catching up as he put on 2.6lbs per day to finish at 1115lbs live weight. A few more details can be found on our Available Supply page at this link.

7B was harvested on 29-Mar-16 at H & P Meats in South Pittsburgh, TN; the nearest processing plant to Huntsville that caries the USDA Federally Inspected designation. His carcas weight was 697lbs and had a great fat cap for aging. The carcass hung for 19 days before being reduced to primal loins for shipment to Star Super Market in Huntsville, Alabama. It was transported to the supermarket in a refrigerated trailer, following USDA and Health Department guidelines.
